Instructions
- In a mixing bowl, combine warm milk, yeast, and a pinch of sugar; let it sit until foamy (5-10 minutes).
- Whisk in sugar, egg, vanilla extract, salt, and melted butter until well blended.
- Gradually add flour until a soft dough forms; knead on a floured surface for about 5-7 minutes until smooth.
- Place the dough in a greased bowl and let it rise in a warm place until doubled (about 1 to 1.5 hours).
- Roll out the dough to about 1/4 inch thick and cut into squares or rectangles.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C) and fry the beignets for about 1-2 minutes per side until golden brown.
- Drain on paper towels and dust generously with powdered sugar before serving warm.
