  • 6 large flour tortillas
  • 1 cup guacamole
  • 1 cup salsa
  • 3/4 cup vegan sour cream
  • 2 teaspoons fresh lime juice
  • 1 teaspoon paprika powder
  • 1/2 teaspoon smoked paprika powder
  • 1 teaspoon cumin
  • 2 green onions, cut into rings
  • 1/2 cup freshly chopped cilantro
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Drain and rinse the black beans and corn.
  2. In a mixing bowl, combine black beans, corn, paprika, cumin, lime juice, salt, and pepper.
  3. Fold in chopped green onions and cilantro.
  4. Lay one tortilla flat; add seasoned rice and bean mixture in the center.
  5. Top with salsa, shredded lettuce, vegan cheese, sour cream, and guacamole.
  6. Wrap tightly and cut in half before serving.
