- 1 can black beans
- 1 can sweet corn
- 3 cups cooked brown rice
- 6 large flour tortillas
- 1 cup guacamole
- 1 cup salsa
- 3/4 cup vegan sour cream
- 2 teaspoons fresh lime juice
- 1 teaspoon paprika powder
- 1/2 teaspoon smoked paprika powder
- 1 teaspoon cumin
- 2 green onions, cut into rings
- 1/2 cup freshly chopped cilantro
- Salt, to taste
- Black pepper, to taste
Instructions
- Drain and rinse the black beans and corn.
- In a mixing bowl, combine black beans, corn, paprika, cumin, lime juice, salt, and pepper.
- Fold in chopped green onions and cilantro.
- Lay one tortilla flat; add seasoned rice and bean mixture in the center.
- Top with salsa, shredded lettuce, vegan cheese, sour cream, and guacamole.
- Wrap tightly and cut in half before serving.
