- 6 cups baby arugula
- 3 cups seedless watermelon (cut into 1-inch cubes)
- 8 ounces crumbled feta cheese
- 1 cup whole fresh mint leaves (finely chopped)
- 1/4 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup minced shallots
- 1 tablespoon honey
- 1 teaspoon kosher salt
- 1/2 cup extra virgin olive oil
Instructions
- In a mixing bowl, combine the orange juice, lemon juice, minced shallots, honey, salt, and olive oil. Whisk until well blended.
- In a large bowl, add the baby arugula and watermelon cubes. Gently fold in the crumbled feta and chopped mint leaves.
- Drizzle the dressing over the salad mixture and toss gently to coat all ingredients without breaking the feta.
- Serve immediately on individual plates or bowls.
