- 10 C. Watermelon, cut into 1 inch cubes
- 1 English Cucumber, sliced
- 1/2 C. Fresh Mint Leaves, chopped
- 1/4 C. Fresh Basil Leaves, chopped
- 1/2 C. Feta Cheese (opt for dairy-free cheese for vegan options)
- 1/4 C. Extra Virgin Olive Oil
- 1 Tbsp Lime Zest
- 3 Tbsp Lime Juice (about 3 limes)
- 1 Tbsp Raw Honey
- 1/2 tsp Sea Salt
- 1/4 tsp Black Pepper
Instructions
- In a large bowl, combine watermelon cubes, sliced cucumber, chopped mint leaves, and basil leaves.
- In a separate bowl, whisk together olive oil, lime zest, lime juice, honey, salt, and pepper until well blended.
- Pour the dressing over the salad mixture and gently toss to coat everything evenly. Top with feta cheese and serve immediately.
