- 1 lb medium shrimp, peeled and deveined
- 1/4 cup fresh cilantro, chopped
- 1/4 cup freshly squeezed lime juice
- 2 cups shredded cabbage (mixed green and purple)
- 1/4 cup mayonnaise
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper, to taste
- 8 small tortillas
Instructions
- Rinse shrimp under cold water and pat dry.
- In a bowl, mix lime juice, cilantro, chili powder, and garlic powder. Add shrimp and marinate for 15 minutes.
- In another bowl, combine shredded cabbage, mayonnaise, lime juice, salt, and pepper to make the slaw.
- Heat oil in a skillet over medium-high heat; cook marinated shrimp for 2-3 minutes per side until pink and opaque.
- Warm tortillas in a skillet or microwave. Assemble tacos by adding shrimp followed by creamy slaw.
- Serve immediately with extra cilantro or lime wedges.
